Chinese Chives and Eggs

Surprisingly flavorful eggs that can be complemented with a beautiful garlic or onion flavor depending on the kind of chives you use. It's super easy to make as well! The shaoxing wine and sesame oil add a lot of flavor to this dish. Furthermore it comes together in about 10 minutes and is great or breakfast, with rice, or as a side dish!

Note: the original recipe call for 2 cups of chives, and 4 Tbsp. oil, which to me was excessive

Ingredients:

  • 5 large eggs (about 250 g)

  • 1 Tbsp. water

  • 1 tsp. Shaoxing wine

  • 1/2 tsp. salt

  • 1/4 tsp. sesame oil

  • 1/4 tsp. white pepper

  • 1/8 tsp. sugar

  • 1 cup garlic or regular chives, sliced into 1 cm pieces (40 g)

  • 1-2 Tbsp. oil


Directions:

  1. Begin heating a wok or nonstick pan on medium high heat.

  2. Whisk the eggs, water, wine, sal, sesame oil, white pepper, and sugar together for 30 seconds or until there are bubbles forming on the surface.

  3. Stir in the chives.

  4. Add oil to the pan and heat for about 30 seconds.

  5. Add in eggs and scramble until cooked to your desired doneness. Because of the water they will be soft and fluffy.

  6. Serve! Makes 2 servings.


Before mixing the eggs, water, and seasonings together.


After mixing. You'll want bubbles on the surface.


Mix in the chives! If the pan and oil are heated you're ready to cook!


Begin cooking in the hot oil.
