Chicken & Spinach Quesadillas

Healthy and extremely satisfying! Warms the soul, gives one hope that they might not die when stranded in the snow.... Made with beautifully brined chicken and taco seasoning. 45 minutes and it's done! The spinach blends beautifully with everything else!

Ingredients:

  • 3 chicken breasts

  • 3 cups warm water

  • 3 Tbsp. fine sea salt

  • 1 medium/large white onion, diced

  • 2-3 cups frozen or fresh spinach, chopped

  • 2-3 Tbsp. taco seasoning (recipe below)

  • 2 Tbsp. diced jalapeno pepper/other chili(s) such as Aji chili pepper (optional)

  • Colby jack, Monterrey jack , pepper jack, or other cheese

  • 3-4 Tortillas

Taco Seasoning (use 2-3 Tbsp. of it for this recipe):

  • 2.5 Tbsp. chili powder

  • 1/2 tsp. garlic powder

  • 1/2 tsp. onion powder

  • 1/2 tsp. crushed red pepper flakes

  • 1/2 tsp. dried oregano

  • 1 tsp. paprika

  • 1 Tbsp. ground cumin

  • 2 tsp. sea salt

  • 1 tsp. black pepper

Directions:

  1. Prepare the taco seasoning mixture, the leftovers will keep like any other spice.

  2. Brine the chicken: Mix 3 cups warm water with 3 Tbsp. salt. Add in chicken breasts, cover, and let rest at room temperature 30 minutes.

  3. Meanwhile cut the onion, spinach, and chilies.

  4. When the chicken is done soaking, lightly rinse it and cut it into small cubes.

  5. Heat 2-3 Tbsp. olive oil in a large pan on medium heat. Add diced onions and sauté for ~10 minutes until starting to turn translucent. Then add in the chicken and cook through.

  6. Once the chicken is cooked, add in the spinach and seasonings. Saute until everything is mixed well and taste for seasonings.

  7. The last thing you'll add is the chopped chilies. Cook for 1-2 minutes lightly (otherwise they loose some of their flavor if you cook them too much).

  8. Take off the heat. In a separate pan place a tortilla. Cover half of it with about 1/4 cup cheese. Spread a layer of chicken over the cheese and fold the tortilla over. Lightly cook and then turn the quesadilla to brown on both sides. Remove from heat, cut, and serve.

  9. 3-4 servings.


Mix water with salt for the brine.


Add the chicken, cover, and let rest 30 minutes. Then rinse and use for the recipe.


Heat oil in a large pan.


Add the onions and then cook them down.


After cooking the onions. Now we can add the chicken.


Add the chicken and then cook it completely.


After cooking the chicken. Now we can add the spinach and spices!

After mixing the spices and spinach in. I then added the chili (the yellow pieces on top) and cooked for 1-2 minutes just to lightly soften them.


Chicken is all done! Now time to make the quesadillas.


First you add your cheese.


Then the chicken mixture.


Fold over and cook until brown on each side.
