Cauliflower Fried Rice

A healthy alternative to traditional fried rice that tastes just as good! Although the texture is different the amount of veggies you get is substantial! Feel free to experiment with other sauces and inclusions!

Ingredients:

  • Vegetable oil

  • 3 large eggs, beaten

  • Salt

  • 1 bunch chopped green onions

  • 3 garlic cloves, minced

  • 1 chicken breast, diced (optional)

  • 1 tablespoon minced fresh ginger

  • One 2-lb head cauliflower

  • 1 cup frozen peas and carrots

  • 1/4 cup chopped cashews or peanuts (optional)

Sauce mixture:

  • 1/3 cup light soy sauce

  • 2-3 tablespoons honey

  • 2 tablespoons oyster or hoisin sauce

  • 2 tsp. cornstarch

  • 1/4 teaspoon red pepper flakes (optional)

  • 1 teaspoon sugar

  • 1 teaspoon sesame oil

Directions:

  1. Grate or shred the cauliflower in a food processor or with a hand grater. Alternatively, grate on the large holes of box or hand-held grater. Set aside.

  2. Heat 2 teaspoons of vegetable oil in a large nonstick skillet over medium heat. Add the eggs and a pinch of salt and scramble until the eggs are cooked. Transfer to a small plate and set aside. Wipe the pan clean.

  3. Add some vegetable oil to the pan and set over medium heat. Add the light scallions, garlic, and ginger and cook, stirring often, until fragrant (1-2 minutes).

  4. Add in chicken and cook completely.

  5. Add the grated cauliflower and soy sauce mixture. Cook, stirring often, for about 5-10 minutes.

  6. Taste it to see if the texture is right.

  7. Add the peas and carrots and continue cooking until the the vegetables are warmed through, a few minutes. Stir in nuts (if using) and eggs.

  8. 5-6 servings.
