Cashew Butter and Date Granola

A delicious and delicately flavored granola that has the creaminess of cashews with the sweetness and caramel flavor of dates!


Ingredients:

  • 2 cups old fashioned oatmeal

  • ¼ tsp salt (only if using unsalted nuts)

  • 1/4 cup + 2 Tbsp. natural cashew butter

  • 2 Tbsp. honey/maple syrup

  • ½ tsp. vanilla extract

  • 3-4 chopped soft dates (pitted), chopped

  • 1/4 tsp. cinnamon (optional)

Directions:

  1. Cashew butter can be made by blending 1 cup of cashews until smooth.

  2. Preheat oven to 325°F and line a baking sheet with parchment paper.

  3. Mix dry ingredients and dates in a medium sized bowl.

  4. Mix cashew butter and maple syrup together. Then mix in vanilla.

  5. Add the wet ingredients to the dry ingredients and mix well.

  6. Spread over parchment paper and bake for 20 minutes, stirring the granola halfway through.

  7. Let cool 1 hour before storing. Keeps for ups to 2 weeks in airtight container at room temperature.
