Banana Ice "Cream"

Made with just bananas! A healthy but delicious alternative to ice cream. It's smooth and creamy just like soft serve ice cream. You can add in anything you want. I like to add peanut butter powder, cocoa powder, and peanuts (as seen above), but vanilla, coconut etc. would work great!

Ingredients:

  • 2 large spotted bananas

  • 1-2 Tbsp. milk (non-dairy milk works) (optional)

  • Optional additions: 2 Tbsp. peanut butter powder or peanut butter, 1-2 Tbsp. cocoa/cacao powder, peanuts, etc.

Directions:

  1. Use slightly overripe, spotted bananas (see below). Prepare a baking pan with parchment paper. Cut banana into 1/4 inch wide disks (see below) and lay flat on the baking pan. Freeze 2-4 hours.

  2. Place the frozen bananas in a high-power blender or food processor. If your blender isn't very strong, some milk may help with the blending process. Blend the bananas by pulsing first until you get a chunky mixture, then pureeing, adding a little milk in if necessary to get a smooth result (see below). Scrape down sides as necessary.

  3. Add in any flavorings and blend until smooth.

  4. Serve with toppings (optional).

  5. best eaten fresh. If you re-freeze, be sure to thaw for 30 minutes or re-blend the banana ice cream before enjoying again.

  6. 1 serving (about 1.5 cups)


Start with slightly overripe bananas.

Cut the bananas into disks and lay flat on a baking pan lined with parchment paper. Freeze 2-4 hours.


Add frozen bananas to blender and blend until smooth and "creamy" add milk if necessary. Mix or blend in flavorings, powders, or toppings.

So creamy and delicious!
