Apple Crisp

It's a warm apple dessert with a sweet crunchy topping. As a lover of apple desserts I made three different apple crisps before settling on this as my favorite. There is some work that goes into making it but it's definitely worth it!

Ingredients:

Crumb topping:

  • 1/3 to 1/2 cups all-purpose flour

  • 3/4 cup oats (Old Fashioned or Instant)

  • 1/4 cup sugar (50 g)

  • 1/4 cup packed brown sugar (50 g)

  • ¼ tsp salt

  • 1/2 tsp. cinnamon

  • A pinch of cloves (optional)

  • A pinch of nutmeg (optional)

  • 8 Tbsp. salted butter, cold and cubed

  • 1 tsp. vanilla extract

Apple Filling:

  • 6 large baking apples (I used half green, half red)

  • 1-2 tsp. lemon juice

  • 1/2 cup sugar (100 g)

  • ½ cup packed brown sugar (105 g)

  • 3 Tbsp. cornstarch

  • ¼ tsp. salt

  • 1 1/2 tsp. cinnamon

  • 1/2 tsp. nutmeg (optional)

  • 4 Tbsp. salted butter, melted

  • 1 tsp. vanilla extract

Directions:

Making the Crumb Topping:

  1. Preheat the oven to 350°F.

  2. Combine the flour, oats, sugars, salt, cinnamon, nutmeg and cloves (optional), and vanilla in a bowl. I recommend adding the nutmeg and cloves!

  3. Add in butter and use your fingers to combine it into the dry ingredients.

  4. Cover and refrigerate/freeze for 30 minutes.

Making the Apple Filling:

  1. Mix together sugars, cornstarch, salt, lemon juice, vanilla, melted butter, and spices in a large bowl.

  2. Peel and cut 6 apples into 3/4 to 1 inch cubes. Add to the bowl with the other filling ingredients.

  3. Mix everything together for 5 minutes. The sugar will dissolve and the mixture will become more liquid.

  4. Add apple filling into 7x10" or 9x13" glass or pyrex baking dish and spread evenly around pan.

  5. Sprinkle the crumb topping evenly over the apples top of the apples.

  6. Bake for 45-60 minutes, it should be bubbling on the outside. If you want to, you can check the temperature to make sure the cornstarch has set up (at 200°F).

  7. Optional: broil for 30-60 seconds until top is golden brown and crisp.

  8. Let cool for 30 minutes before serving.

  9. 12 servings, preferably served warm with vanilla ice cream.

  10. Note: You can use a metal pan, but it will probably need less time to bake.


Two-person serving size:

Crumb topping:

  • 1/4 cup all-purpose flour

  • A little less than 1/3 cup old fashioned or instant oatmeal

  • 2 Tbsp. white sugar

  • 2 Tbsp. packed brown sugar

  • 1/8 tsp salt

  • 1/4 tsp. cinnamon

  • A pinch of cloves

  • A pinch of nutmeg

  • 4 Tbsp. unsalted butter, cold and cubed

  • 1/2 tsp vanilla extract

Apple Filling:

  • 3 large baking apples (I use 2 green, 1 red)

  • 1/2 tsp. lemon juice

  • 1/4 cup white sugar

  • 1/4 cup packed brown sugar

  • 1 1/2 Tbsp. cornstarch

  • 1/8 tsp. salt

  • 3/4 tsp. cinnamon

  • 1/8 tsp. nutmeg (optional)

  • 2 Tbsp. butter, melted

  • 1/2 tsp vanilla extract

For smaller one, a 4x6 or 8x8 pyrex or glass pan is fine. Bake for about 35-40 minutes and broil for a few minutes if needed.
