Almond Joy Granola

This healthy granola recipe is not super sweet and it has a great combination of chocolate, coconut, and almonds! I like to eat it as I would with cereal, with almond milk in the mornings for breakfast.


Ingredients:

  • 3 cups oats

  • 1/2 cup chopped almonds (optional)

  • 1/4 cup almond butter

  • 1/4 cup honey/maple syrup/date paste

  • 2 Tbsp. cup coconut oil/any flavorless oil

  • 1/4 cup cocoa/cocao powder

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • 1/2 cup shredded unsweetened/sweetened coconut

  • 1/2 cup chocolate chips (optional)

Directions:

  1. Preheat oven to 275°F.

  2. Mix oats and nuts together.

  3. Melt cocoa powder, honey, coconut oil, almond butter, salt, and vanilla in a microwave or on a stove top. It melts fast but make sure you mix it well so there’s no clumps of cocoa powder.

  4. Mix the chocolate mixture into the oat mixture until well coated. Mix in ½ cup coconut. Another option is to add ¼ cup coconut not and add ¼ cup when it’s finished baking.

  5. Spread on baking sheet with parchment paper and bake for 40-45 minutes. Halfway through the baking time use a spatula to mix the granola around.

  6. When done, sprinkle chocolate chips on top and add ¼ cup coconut (optional).

  7. Makes about 3.5 cups.

  8. Goes well as a cereal with almond milk or coconut milk.
