Almond Butter

I've tried store-bought almond butters and they're never smooth and are really expensive. Instead of paying $10, you can make twice the amount (~ 2 cups) with a 16 oz. $7 bag of regular unsalted almonds.


Ingredients:

  • 1-2 cups almonds will yield 1/2 - 1 cup almond butter.

  • Sweeteners (optional) and add at the end of the blending process


Directions:

  1. Using a high power food processor or blender, add the almonds (and nothing else). Blend for 1 minute until crumbly. Scrape down the sides.

  2. Then, for the next 30-40 minutes, stop the blender and scrape down the sides every 2-5 minutes if you see almond bits "crawling" up the sides and not getting blended.

  3. See pictures below for what the mixture looks like every 5 minutes (with sides scraped down.)

  4. You can stop at 20-30 minutes, but to get a really smooth almond butter, keep going for 30-40 (I went 40).

  5. If you want it to be sweet, add in honey, sugar, or maple syrup at the end of mixing. I tried adding honey during the process once and it was an absolute disaster because everything clumped together and stopped blending.

  6. Keep in the refrigerator in an airtight container for up to two weeks. Avoid leaving at room temperature because it lacks preservatives. However, you can let it soften at room temp for ~30 minutes before each use, as long as you store it back in the refrigerator after.


Almond butter: 1 cup Almonds before processing. This only makes 1/2 cup so I kind of wish I had done two!

Almond butter: 10 minutes into processing. Make sure to scrape it down every 2-5 minutes!


Almond butter: 15 minutes into processing.


Almond butter: 20 minutes into processing


Almond butter: 25 minutes into processing


Almond butter: 30 minutes into processing


Almond butter: 35 minutes into processing.


Almond butter: 40 minutes into processing (I stopped at this point.)
