Tomato Basil Ricotta Toast

Amazing crunchy bread with creamy cheese, aromatic basil and garlic, topped with delicious roasted tomatoes! This toast is like pizza margherita but without all the steps and heat from the oven! This simple recipe combines basic ingredients in a super flavorful way. You can get ans creative as you ant, using different cheeses, adding parmesan, melting the cheese or adding other ingredients you like.

Ingredients:

  • 2 slices bread (sourdough works well)

  • 1 small garlic clove, cut in half

  • 1-3 tsp. Extra virgin olive oil

  • ~4 Tbsp. fresh cheese or ricotta

  • Roasted tomatoes (cherry or roma)

  • Fresh basil leaves

  • Coarse Salt

  • Pepper


Directions:

  1. You will want to toast eh bread and prepare the other ingredients hile your tomatoes are roasting.

  2. To roast the tomatoes slice large tomato into 1/4 inch slices, or cherry tomatoes in half.

  3. Place on a parchment paper lined baking tray. Lightly coat with olive oil and coarse salt on each side. Broil on the second-to-highest oven rack for 10 minutes, flipping halfway.

  4. While the tomatoes roast, scrape the exposed garlic clove onto the bread surface. Be as generous as you would like. Brush the toast with olive oil.

  5. When the tomatoes are almost ready add a layer of ricotta, fresh mozzarella, or other fresh cheese to the toast (alternatively you can melt the cheese on the toast). Sprinkle the top with salt if the cheese isn't salty.

  6. Add basil leaves and tomato slices on top. Sprinkle with salt and freshly ground black pepper. Drizzle with olive oil, if desired.

  7. Eat fresh!

Notes: you can skip the roasting and use fresh tomatoes if preferred. Wilting the basil in the oven while cooking the tomatoes will bring out more of it's flavor (I think I'll do that next time).

After roasting, hey have an amazing texture and flavor. Anyway, let's focus on the toast, which you should have already started preparing!


While the tomatoes roast, toast the bread, scrape a garlic clove across the surface, and brush the surface with olive oil.


When the tomatoes are almost ready add the cheese (and salt if necesary) and basil onto the toast.


Your toast is ready! Eat straight away!
