Pat's Reuben Sandwiches.

I have a brother. Well I actually have six brothers, but one of them goes by the name "Pat" and makes fantastic Reuben sandwiches. Short story: as a kid I thought reubens were disgusting, now I love them. Funny stuff. If you want to try this incredibly savory and indulgent sandwich that is stinky but unbelievably delicious, I highly, highly recommend it!!!


The recipe is here for 2 large sandwiches, and pictures of the process are below:


Ingredients:

  • 2/3 cup regular (or Libby's) sauerkraut, well drained

  • About 3/4 Tbsp. sour cream (optional, but recommended)

  • 4-6 slices swiss cheese

  • ¼ to ½ lb. thinly sliced corned beef (8-12 slices)

  • "Beefsteak” brand pumpernickel bread (4 slices)

  • 2-4 tablespoons soft salted butter

Directions:

  1. Drain the sauerkraut and press with a fork until most, ut not all of the juice comes out.

  2. Mix sour cream with sauerkraut.

  3. Heat up a non-stick pan on low-medium heat.

  4. Butter one side of each slice of bread. To assemble, you can do 4-6 slices of meat, half the sauerkraut, and then cheese. My preferred way of making this sandwich: butter the bread, then on the unbuttered side add a single layer of swiss cheese, 3 slices corned beef, about 1/3 cup fo the sauerkraut mixture, 3 slices corned beef, one single layer of swiss cheese and then the top piece of bread (butter side up).

  5. Cook on one side for about 5 minutes, covered so the sandwich heats through and he cheese melts. Then flip, cover, and cook another 5 minutes. It is best if some of the swiss cheese oozes out and fries a little. Make sure the heat is low enough so the bread doesn't burn!

  6. Makes 2 sandwiches. Serve hot!

  7. Note: The fattier your corned beef is, the better!!! If a bit of it sticks out of the sandwich and crisps up on the pan that is delectable!

The ingredients I used. I highly recommend finding deli-style corned beef or something like the package here, which are actual meat slices with fat :)

Drain the sauerkraut (you don't have to drain all the juice out.)

Add the sour cream.

Mixed! Now time to assemble the sandwich!

Butter the bread on one side.



This is how I assemble my sandwich, but you can assemble however you'd like:

One slice, butter side down.

Add 1 layer of swiss cheese.

I add 3 slices of the beef.


ree

Then about 1/3 cup sauerkraut.


ree

Then 3 more slices of beef.


ree

One last single layer of cheese.

And the other bread slice, butter side up!

Then add your thicc boi to a pan on low-med heat.

Cover and cook about 5 minutes.

Then flip it!

And cover and cook another 5 minutes.
