This pizza will definitely satisfy you in a pinch. I always eat mine in under 5 minutes :) This is a new take on a Brockamp family classic, the tortilla pizza. Unlike how we used to do it (sauce, cheese, pepperoni between two tortillas and microwaved), this version is much tastier and takes about the same amount of time!

To make pizza sauce

The recipe is here, and pictures of the process are below:

Ingredients:

  • 2 tortillas

  • Pizza Sauce

  • Mozzarella cheese

  • Parmesan Cheese (optional)

  • Preferred toppings (e.g. pepperoni)

  • Garlic Powder (optional)

  • Italian Seasoning (optional)

Directions:

  1. Add a light layer of sauce and cheese to one of the tortillas. Top it with the other tortilla.

  2. Toast the pizza on both sides in a clean pan until lightly browned on both sides.

  3. Transfer the pizza to a baking tray. Top the top of it with more sauce, cheese, toppings, and a final sprinkle of garlic powder and italian seasoning (optional)

  4. Place the pan + pizza on the top shelf under the broiler for 2-5 minutes. Rotate it if it's browning unevenly. It's done when all the toppings are melted and browned. If the broiler is too hot, you can lower the pizza's position in the oven or turn down the heat.

  5. Cut and enjoy immediately!

Add a layer of sauce to the bottom tortilla.

Sprinkle some cheese on.

Then top it with another tortilla. Now it's like a quesadilla. Next we'll lightly brown it on both sides in a pan.

Browning both sides in a pan.

Once browned you can top it like any other pizza (sauce, cheese, toppings)

It's topped and ready to go into the oven!

Pizza under the broiler on the top shelf.

And it's done!
